This is correct. Sendmail "is the relay". You don't need another sendmail server inside your domain to send to. If you have sendmail installed you can send mail to the other SMTP servers which is what you're trying to do. I believe Postfix is the same deal.

Also you don't need the "Server" version of OS X to do any of this. A standard OS X installation has everything needed to at worst be able to install an SMTP server and run it.

Actually, now that you mention it, you may be able to just use the SMTP
server of your ISP.

Exactly. If they are using an ISP to forward mail through the ISP's SMTP
server. They may not be, Mdaemon for example will send directly to the
receiving domain's own mail server if possible. I don't know how many mail
servers do that, but I know some definitely do not and would need to relay
the mail through a legitimate SMTP server (of an ISP usually).
