We use CVS and the Mac GUI for it, CVL. We have had our CVS repository
housed on Solaris, and recently migrated it to an OSX Server box. You
don't have to use OS X Server, Client is fine, but we had space and a
RAID on one of our Server boxes so that's where it ended up. WO has
native support for cvl.

has a number of CVS setup GUI tools, too.
