http://docs.info.apple.com/article.html?artnum=75297 describes how to rename an OS X Project Builder project. Xcode has much in common with the OS X Project Builder, so I'd probably start with the instructions in this article. Some steps won't apply to Xcode, but there may be equivalent steps that can be substituted.
