Does that mean that the defaultEditingContext() does not have an undo
manager by default, while a call to new EOEditingContext() returns an
EC that by default does have an undo manager?

well-known Charles alias Chuck Hill. The book covers all these things
in depth.

An undo manager exists for all editing contexts but you can change it.
