I have
AddCharset UTF-8 .utf8
in the httpd.conf file, is that ok?
I'm not really sure it's a webserver issue...I really feel like it's
a MySQL issue, I can't precisely explain why though...

This sounds like a problem with your webserver. Please, check the
encoding of
the webpages and make sure, that the server (Apache?) delivers the
right
encoding. You may want to deliver pages utf-8 encoded, so a config
line like
AddCharset utf-8 .html
would fit your needs, IIRC.
