My recommendation for a learning progression:

Apple's tutorials --> Joshua Marker's WebObjects Visual Quick Pro guide --> Sacha Mallias and Chuck Hill's Practical WebObjects

...actually, forget about progression, just buy Practical WebObjects now :-)
