Just to be clear, I still want Xcode 2.1 and all that (I do a lot

Leaving WebObjects on your system shouldn't hurt anything.
The main things are it has changed the appearance and behavior of
Interface Builder, and that new/resaved nibs now having two extra
java/webobjects-specific junk in them which I don't want to be in my
svn repository or in the nibs at all.
If you just want to free up some disk space and the tools
uninstall script cannot be easily modified to remove just
WebObjects, you could open each WebObjects receipt in /Library/
Receipts and look at the list of files installed by each. You
could then delete these files manually. You'd also need to open
each receipt package to examine the preinstall and postinstall
shell scripts to see whether you need to reverse anything these
scripts did. All of this can be pretty tedious.
Which is really lame. It's extremely annoying Apple doesn't have an
Uninstaller like they do Installer. It's a piece of cake to put
anything on your system, but to take some things off practically
requires a reinstall.
