You can also edit the StartOpenOffice Applescript (that is all that the
"start" app is) and change
references to XDarwin to references to X11. That way you can just
click on the Start OpenOffice.org
icon whether X11 is open or not, and it will open with X11.
You can find the Applescript by control-clicking on Start
OpenOffice.org, displaying the application
contents,and navigating your way to the Applescript.

I had the GIMP and OpenOffice running under Apple's X11.
Worked fine after a little troubleshooting of environment setup.
