A basic introduction about how X works can be found at:

It's mostly a clearinghouse of links; for information on what apps to
run, follow the comp.windows.x.apps FAQ link.
As an aside, you do *not* need X11 to run emacs. The carbon port of
GNU Emacs 21.3 is what I use daily.

X11 is very complex. Basically, it usually runs behind the scenes on
most Unixes, so a beginner doesn't even think about it. It's like
the Macintosh Window Manager. It's very complex, but you aren't
supposed to have to worry about it.
The idea is that if X11 is running, you can now run other programs
that will use X11 to draw their windows, instead of Aqua.
1) Run X11
2) Run another application that requires X Windows to run, like emacs.
There's your very basic tutorial. :-)
