You have to compile separately on every platform you plan to support. The
Gtk+ or Qt bits in your code should be the same on all platforms, though.

Qt would probably be better for you because it runs natively in all of those
platforms. Gtk+ has no native OSX version (your users would have to run your
application in X11). Another plus for Qt is the availability of an IDE with
a GUI builder that runs on all of the supported platforms.

You should also look into wxWindows (http://www.wxwindows.org). It supports
Unix/Linux, Windows, and MacOSX all natively. Plus, it's free.
