Since OS X 10.2 came out the tools for making custom keyboards for this OS
have been available at
http://www.wordherd.com/keyboards
and there are dozens floating around. It would be easy to make one for
any Unicode symbols you needed.
How well these work in OpenOffice I don't know.

The main issue is the outdatedness of Office X, which needs to be upgraded
to be Unicode-savvy.
