xterm -e /sw/bin/civserver & ; /sw/bin/civclient

put it in $HOME/.xinitrc, just before the line exec quartz-wm (or any other window manager) and it will start with x11 or make a shell script with these two lines

xterm -e /sw/bin/civserver &
/sw/bin/civclient &

and call it from the menu.
