How to change shell valluables

Hello.
It's mac and unix begginner.

I installed  "gnuplot" package, being to have started using.
Installed gnuplot program to /usr/local/bin
so, I want to add it to my shell valluable "PATH".
I tried as follows.

prompt: > set PATH=$PATH:/usr/local/bin
or
prompt: > set path=( ~/bin /usr/local/bin /usr/bin )

but effects as follows.

PATH=/bin:/sbin:/usr/bin:/usr/sbin

..etc

_=PATH=/bin:/sbin:/usr/bin:/usr/sbin:/usr/local/bin
_='path=(~/bin /usr/local/bin /usr/bin)'

The person who knows the configuration manner of shell variables, please
teach who.
