Actually, Apple's X11 uses the standard Xinerama extension that most
modern X servers support. You can turn it on in linux (or any other
system running X) by starting X with the -xinerama flag.
They turn it on by default so that the user experience is as close as
it can be to Aqua. If you enjoy having one unusable screen (since it
would be difficult (impossible?) to switch the mouse to the other
"screen" when aqua uses both screens but there are 2 X servers
running), then you can start Apple's X server manually (it lives in
/usr/X11R6/bin/Xquartz) with whatever options make you feel special.
