did you check if there is some kind of error logged in /var/log/*
and/or /Library/Logs/CrashReporter? - did you try to invoke X11
directly from the Terminal.app to see if it writes something to
STDOUT/STDERR when it crashs?
(like '% /Applications/Utilities/X11.app/Contents/MacOS/X11')
it could be also possible that you run into some kind of resource
problem - i.e. a X11 server needs a lot of RAM when you run it in
xinerama mode and/or high resolution/color depth - i had some X11
crashes on older f/BSD boxes when they ran out of physical RAM.
(i.e. use '% top -s vsize')
perhaps try to disable some of the X-extentions and see if it gets
more stable.
