I'm building them with CFLAGS="-arch i386 -arch ppc", as that is how the binaries are built for distribution with Mac OS X 10.5.

(See, for example, http://www.opensource.apple.com/darwinsource/10.5/X11server-46/build) .

One could argue that the binaries we shipped for X11 with 10.5 aren't shining examples of bug-freeness, but I am confident that none of the problems were a result of building the binaries as fat in one step.
