So turn it off using the one-liner method already described.

Ironically, I just pasted the "defaults write" command (thank goodness for mailing list archives) into a new xterm that had popped up because I clicked the wrong dock icon, and then hit return, but since the window was not in focus despite it being in the foreground and my just having pasted a command into it, I ended up hitting return to send an email before I was finished writing it.

Not an impotant email, but ARGGGHH.

In theory I think /usr/X11/X11.app should be that thing, but for some
reason even that app causes a second X11 to show up in the dock.  This is
truly weird, and should be fixed.
