I've held off doing that for the present until I get Time Machine set
up. I have been bitten on previous systems in the past installing stuff
(CUPS) independently of the Software Updates and although the Xquartz
stuff seems to be 'almost official', I'm still wary. Once the disk
arrives and I have it set up, I'll try it.

Ahhh. Clues!
I just tried xev and that was illuminating. When I repeated step 5, and
ran xev there was no feedback at all. I realised that my hunch about two
instances of X11 being launched (Step 8) might be correct. Without
killing the xev process, I quit the instance of X11 that was running.
Instantly, another instance kicked in and the xev process did its stuff.
So, my symptoms are...
If I run X11, then quit, then connect from a terminal using ssh -X then
the system is launching two X11 processes, the first of which blocks
connections to the second (which is the 'correct' one).
