I maintain X11 on MacPorts, so I am that package manager. MacPorts uses their own X11 libraries. The X11 client applications will run on any X server.
I believe fink still uses /usr/X11 for X11 libraries. Installing XQuartz on SL will not interfere because it installs to /opt/X11 and leaves /usr/X11 alone for the OS. Installing on Leopard replaces /usr/X11. This will affect fink, but it shouldn't cause any problem as the same thing could happen with an Apple Software Update.
