MacPort's xorg-server does not install a LaunchAgent plist, so it shouldn't be restarting.
If you installed the XQuartz.macosforge.org release, you are likely seeing an issue with X11.app not knowing how to live peacefully with XQuartz.app. This should only be seen if you actually launch X11.app directly. In the default configuration, XQuartz.app should own $DISPLAY, and X11.app should never be started unless you do it yourself. This is a known issue with the version installed on SnowLeopard, and hopefully a fix will be provided through Apple's Software Update to address it soon.
The workaround is to logout, log back in, and not launch /Applications/Utilities/X11.app directly.
