What application do you use to connect to the XP machines? Is it a VNC client? Which one? I'm surprised that you'd just be seeing garbled text? Images are OK? As far as we're concerned, the text is just another image. Windows XP is what is taking care of rendering the fonts on its system.

You probable enabled fullscreen mode. You can hit cmd-opt-a to leave full screen mode. If you didn't disable menu access while in fullscreen mode, you should still have access to the auto-hiding menu bar by moving the mouse cursor to the top of the screen.

Start X11.app, then hit cmd-opt-a. You can also use the defaults command to change the preference, but it's not necessary.

It sounds like an issue on the remote end, or a bad video compression artifact in whatever remote access application you're using.
