Ben,

A build style is a project level configuration element. Click on the project icon (not the target icon) in the Files and Groups pane and do a Get Info or Show Inspector for access to the build styles settings.

Documentation on Build Styles can be found by calling up the Help->Xcode Help window, setting it for full text search, and searching for "Build Styles".
