Well, ok,
I am using Xcode for 4 months now and got the very buggy and slow
version at the beginning ;)
But even at the beginning my feeling was not so bad even if the
criticism you make are for the most part real :)
I am using Xcode for big project made of many big sub projects with a
lot of dependencies.
Maybe you are not working with XCode the way you would for now becuase
you are right there are some bug still alive.
First I think that the best layout to use Xcode is a big window with
the editor in it and the context pane at the top open all the time. In
this way you don't need the build or the find panel very often.
You get quick access to some file with the help of the smart group
system, very useful for very big project..
For me the very important think Xcode gave is the new UI that is more
clean and the speed of the compilation, plus code sense event if does
not work all the time as I would want.
