Select a target, Get Info, switch to Properties tab. Any changes made
there are saved in the target's Info.plist. Anything not covered in
the GUI must be edited manually.
Actually, a graphical property list editor is available and is by
default associated with .plist files in the Finder (it is in
Developer:Applications:Utilities).
In XCode, just right-click a .plist file and select "Open with Finder"
to edit the property list with this graphical interface.
