How do I access the project target editor?

Newbe, be kind, my second week in Xcode...
I am currently starting to work my way through the Vermont Recipies
book.
I am having difficulty accessing the editor which should show at the
top:
Target "Vermont Recipes" of Project "Vermont Recipes"
and allow access to Summery, Settings, Info,plist Entries, Build Phases
and their sub settings.
I am attempting to edit the project target and resources. In my project
file (which I created from New Project... / Cocoa Document-based
Application) when I select "Target / Vermont Recipies" from the groups
and files list, it does not select an editor, however when I do the
same from the project file I downloaded from the Vermont Recipies web
site (originally a ProjectBuilder project) it takes me to the expected
editor which allows me to change settings as expected.
A couple of side notes: I noticed that "Target / Vermont Recipies" from
the groups and files list shows the generic application icon in my
file, however in the downloaded file it shows a bulls eye icon with a
little green circle and checkmark. Also when I view the Info window for
"Target / Vermont Recipies" it presents me with five selections (Genral
- Build - Rules - Properties - Comments) whereas the Info window for
"Target / Vermont Recipies" in the project I downloaded presents me
with only two choices (General - Comments).
This is the same in both Xcode 1.2 and 1.5.
