That took care of the problem. I had confined my search to Apple's documentation. I suppose I should have looked further afield then I did.

If you choose "Show Expert Preferences Notes" from the Xcode Help menu, the very first item is this:

• PBXCustomTemplateMacroDefinitions
A dictionary that provides extra macros for use in file and project templates. One, ORGANIZATIONNAME, is used in several of the standard templates and can be set in this dictionary to provide a default expansion. You can define and use your own macro names as well.
