Editing targets

I have an Xcode project for a game (using SDL) which has a target in the Targets group. I can click on it and get a cool editor with fields, which lets me set things like the .plist entries. and shows the build phases (which is important because I had to tweak them).

I've also been doing some Cocoa tutorials, and those projects don't have anything like this. Instead, the target group has a sort of application in it, and clicking on it doesn't allow any editing. (I can 2click to get an inspector, which lets me edit some stuff, but still doesn't show build phases.)

I don't really understand the two types of targets.
