Don't forget that OS-X includes Unix, so all of the languages
available on Unix should be usable on the Mac, if you don't mind using
the command-line interface!
My preferred language is Dylan, and there is an open source
command-line implementation available (see my .sig). On the Mac, you
can use it to write programs that use the Carbon and Cocoa frameworks
(just like every other general purpose language, of course.)
