If I double-click on an "Executable" I get a window with launch options, including "Arguments". Used it, it works. Under Arguments there is a little + sign, and if I click it, it gives me an additional "arguments" line. As if I were setting up two alternative ways to launch the program. But how then do I actually make use of this?

With the check box next to each arguments entry. This is useful for debugging different failure cases, or for doing simple validation. Set up five or six different ways to invoke your code with different arguments, then when you want to validate or debug a particular code path, just check the set of arguments that corresponds to it.
