What do crossed out settings mean?

I am wondering what a crossed out setting (Header Search Paths) means in xcode. It has a line through it. Can anyone clue me in. Also, has anyone come up with any tricks for putting paths into xcode settings? Anything other than simply typing in a long list?
God I miss PB....
