Sorry for not being clear in my original post. What I meant to say was this:
BBEdit and CodeWarrior both allow you to enter the currently selected text as the replace string, thereby not even having to invoke CMD-F. Although XCode allows you to enter the find string just fine (by using CMD-E), it doesn't seem to have, nor allow assignment of, a keyboard command to enter the replace string (in CodeWarrior, it's "CMD-SHIFT-E"). Is there some way or thing I'm missing, or is this really not possible?

command-f does indeed bring up the appropriate dialogue... see:
Are you maybe using an old version of Xcode? I'm not sure where the
find-replace functionality first appeared.
