That feature is sorely lacking in Xcode. I couldn't believe it wasn't
there the first time I looked at Xcode. You could maybe script it
with the scriptable UI, or QuicKeys, but that would be a kludge.
Yes, command-shift-e should definitely be supported as a mechanism for
entering the replace string without opening the find window.
