MallocDebug display addresses corresponding to call to malloc etc.. in hexadecimal form ("0x...") rather than as the function name ("myFunction"). This is only true for addresses in my application.

How to build my application to have these addresses displayed with function names ?

If you run a "Development" build, rather than a "Deployment" build, the symbolic info should be available (remember to build clean between switching build styles).

Another question (likely related with the previous) : when I try to attach MallocDebug to my running app (File > Attach…), I got the error message "No applications running with libMallocDebug"

Have you tried to launch your app in MallocDebug from the "Debug > Launch using Performance Tool" menu in Xcode?
