Thanks - I hadn't thought about approaching it that way. It looks
like deleting the files from that build phase (or dragging a bunch of
files into that build phase) does in fact accomplish the mass change.
I would still find a script attached to a keyboard shortcut to be
easier, so if anybody has any hints in that direction, don't withhold
them :)

lists of files, clicking each item as I go. Having a script to
quickly toggle a large selection would make my life a lot easier.
I think you can do a multiple selection in the "Source Files"
section of the target and remove the files there. Clicking on those
checkboxes takes forever as XCode recalculates the whole tree after
each click which takes a couple of seconds if you have lots of
files in the project.
