Apple does not automatically update the Developer tools by Software Update or any other mechanism. You need to download the newer versions from Apple's developer web site when they are released.
To find out what version of Xcode you have, just do File/Get Info on the Xcode.app icon in Finder.
The latest version is Xcode 2.2
