say i want my xcode compiler to be "/Developer/SDKs/Gcc-4.0.2-tiger-
gnu.sdk/usr/local/bin/gcc" instead of "/usr/bin/gcc-4.0".

how would i set that per target ?

Create a custom build rule. Open the target's info window and choose the Rules tab.

does anyone know how to specify this in a SDKSettings.plist file ?
