I am not sure if the developer CD has the Java docs, etc. on it but I seem to recall that is was an install option in the installer. So run the installer again (it may be on your hard drive if you didn't get a CD under I believe /Applications/Installers) and look for it as an option.
Anyway if you head over to ADC (Apple Developer Connection)[1] and sign up for at least the free account you can login and find the latest Java developer package downloads under the Java downloads section.
With all that said Xcode (at least 1.5) isn't the best Java IDE for Mac OS X in comparison to things like Intellij IDEA and Eclipse (personally use IDEA for Java and Xcode for all else).
