Ah, so I can tap into the Mac-only features using Cocoa and Carbon but
will have to write the code in either Obj-C or Java.  Thank you for
clarifying that.  Now I just have to understand what Cocoa and Carbon
are commonly used for.

This really isn't the mailing list for questions like this that don't relate to the IDE. Carbon is essentially a C API. It's often used by people who wish to use C++, or because it's typically closer to Windows APIs.
