Well I cannot change anything in the get info dialog of the any of
the items contained in the products group. Everything is red and
greyed out.

Normally, you don't create product paths. They should be set up
correctly when you create the target.
However, if you need to change it simply select the product in the
Products group and change the path and reference type in the Get
Info window or the Inspector palette.
