Go to the "File Types" preference pane and find the "text.sdef" file type (disclose the "text" item). Set it to be "Plain Text File" instead of the default value. Now when you open an .sdef file in Xcode it should open up as text.

If you want to have a different behavior infrequently, use the File- >Open As... menu item (it's also in the contextual menu).

The .sdef file in my project seems content to open as XML but I don't have the sample .sdefs in any project.
