The style does override the target setting. When the target setting is overridden by the style, the setting is displayed in strikethrough. Style settings are accessible in the Style panel of the info window for the Project (top) icon.


The popup at the top of the Style panel chooses which style to display, but does not put any style into effect. Use Project->Set Active Build Style to select a build style.
