In the "Find" menu (or the Editor contextual menu) there is a "Jump to
Definition" command.  Once I've jumped to a new window, is there a
"Jump Back" command?  Something that will take me back to the previous
selection, either in the same window (file) or another one?
Not as far as I'm aware. When I raised a bug asking for "Jump To Definition" to be enhanced to behave more like the CW equivalent (including letting you enter a symbol if you don't have one selected), it was marked as duplicate. So if we're really good this christmas...
