  C++ questions can also be asked on the "Developer"  Forum on the Apple Discussion boards:

http://discussions.info.apple.com

  You'll find the "Developer" forum under the Mac OSX Technologies button (for example).

The "Xcode 2.1 User Guide" probably answers all or most of your Xcode questions.  You'll find it in PDF and HTML at http://developer.apple.com/documentation/DeveloperTools/Xcode-date.html

As for C++, I'm not aware of an appropriate Apple mailing list for such questions (although some of your questions might be Carbon questions?).  Maybe try comp.lang.c++ and related groups on USENET?
