I am seeing this on my machine as well (PowerMac G5, Mac OS X 10.4.8,
iTunes 7.0.2), and it does seem correlated to activity (compiling,
launching, switching from one app to another, etc) but doesn't
correlate with the intensity of activity (just switching apps will
sometimes cause it). Not sure, but I think it started after I
upgraded to Mac OS X 10.4.8.
And it isn't limited to iTunes. QuickTime Player does the same thing.
And not just music files. Playing internet streams stutters as well,
in both iTunes and QuickTime player.
My uninformed guess is that you're seeing some light paging. Linking
can be fairly memory intensive, and I'd guess you're running low
during the link phase, which causes other apps with realtime
priorities (like iTunes) to be forced to page out.
I'm not a whiz with unix tools, but I usually check this by opening a
terminal shell and running top, then monitoring the pageout stats. If
they really start spinning while you see the stuttering, then there's
your problem - and the short-term solution is more RAM.
I mention this because I had a similar problem with a new MacBook
recently. It only had 512MB of RAM and exhibited odd stalling and
lock-ups that at first I chalked up to a hardware problem. When I
noticed that Firefox was chewing through RAM and causing massive
pageouts, I got more RAM (and switched back to Safari) and have been
stutter-free since.
