There is an application in /Developer/Applications/Utilites called FileMerge.app You can use that to compare two files. Not sure if you can invoke it from within Xcode (though I am pretty sure it's what the app uses when doing CVS compares, and interface builder too)

Then there is always diff too :-)

There doesn't seem to be any sort of pure text compare available in the GUI.
