Generally, you wouldn't approach it from a perspective of "learning Xcode", but rather you'd choose a technology that you want to develop apps in (Carbon, Cocoa, Java, WebObjects, etc) and then start off down that path, learning Xcode as you go. What sort of applications do you want to develop? etc.
