Look at it from the other side. If the official channel was forums like this, Apple would have to have people who did nothing but comb the forums, send mail to people asking for reproducible cases, configurations, etc. I agree that the method is cumbersome, especially for feature requests, and I wish that there was another way to file feature requests.
For real bugs, however, it is absolutely essential that the originator of the problem provide as much information as humanly possible for there to be any hope of reproducing it in-house and fixing it.
Keep in mind, also, that by setting the bar this high - it takes this much effort to file it -, Apple ensures that the developer has a real concern and is not just whining all of the time.
One last thing, Apple people do read the forums, and they have a general sense of what the community wants. They, just like all of us, have competing constraints for resources and time, and so have to prioritize based on all of the feedback. Fixing issues filed directly is more important than general trends in mailing lists.

Understood! It can be frustrating dealing with tools of all kinds.
I am sorry if I have flooded this forum. But as far as xcode is concerned, I think there is some level of relevancy in it.
A wish list is not a bug. Perhaps, Apple can put up a website for wish list. It will be some kind of to-do list. New comers or people who is about to switch to, for example, xcode, will have an idea of what is lacking and be aware of some pitfalls (I wouldn't call it pitfalls for some cases).
When a wish has been fulfilled, Apple can strike out that wish item. Or some kind of status can be assigned to every items. For example, "Pending", "TBD", "In Progress", "Done" and etc.
I will see if I have some time in this evening or tonight so that I can put up a quick demo wish list at my site. Then everyone can take a look and decide what is the best method to take care of this kind of post.
