I believe so (I've only done it with C and plist), though you may
need to be careful about what exactly goes in the shared .h. (I have
a C macro that assembles the version.)
And you'll want to enable "Preprocess Info.plist File" and
"Info.plist Preprocessor Prefix File" in your project or target
settings.
