Okay, I guess I'm just an idiot when it comes to Xcode, but how to do I get it to do a full search and replace using all my source and header files? There's no Replace All button in the Find in Project window.

Sorry, I don't have headers for you to read, so you'll have to settle for documentation:

http://developer.apple.com/documentation/DeveloperTools/Conceptual/XcodeUserGuide/Contents/Resources/en.lproj/01_07_pr_navigate/chapter_10_section_2.html

In Project Find (which is implicitly multiple-file), Replace replaces in the hits selected in the Find Results, or in all of them if there is no selection.
