It's the same reason why some people write "IPod" or "I-Pod" or "IPOD". They see the word hundreds of times, yet the part of the brain that learned pre-existing capitalization rules kicks in.

Although you must admit that "Xcode" *does* go against the computer- related word capitalization precedent that has been set down by hundreds of thousands of apps before it, where multiple words are squished into one word and each subword is capitalized; BBEdit, DropStuff, TextEdit, TeachText, AppleScript, HexEdit, ColorSync, VoiceOver, etc.
